3 Tbsp Butter
3 Tbsp Flour
1 clove garlic, crushed
1 small onion, chopped
2 celery stalks, chopped
2 carrots, chopped
1/4 cup chicken bouillion
3/4 cup white wine
2 cups half & half cream
3 Cans of crab, 2 drained and rinsed, one not
1 tsp pepper
salt to taste
Melt butter in pot, add flour and garlic, whisk smooth,add crab, add veggies, stalk and wine, simmer until veggies are tender add cream and seasonings. Purée in blender until smooth.
Can be made ahead of time and reheated just prior to serving.
Makes 6 small servings, perfect for a first course.
